Here are some tips to better choose and taste oysters: 

UNDERSTAND THE CLASSIFICATION OF OYSTERS 

FLAT OYSTERS :

The size is calculated according to the weight per 100 oysters, so the bigger the number of the category, the smaller the oyster will be:
000 corresponds to a weight of 10/12 kg for 100 oysters
00 ...................................... 9/10 kg for 100 oysters
0 ....................................... 8 kg for 100 oysters
1 ........................................7 kg for 100 oysters
2 ........................................6 kg for 100 oysters
3 ........................................5 kg for 100 oysters
4 ........................................4 kg for 100 oysters
5 ........................................3 kg for 100 oysters
6 ........................................2 kg for 100 oysters

HOLLOW OYSTERS

It is important to know that the smaller the number, the bigger the size of the oyster. In hollow oysters, the biggest size is 0, the smallest is 5, knowing that the minimum market size of hollow oysters is 30 g:

from 30 to 45 g ........... calibre n°5
from 46 to 65 g ........... calibre n°4
from 66 to 85 g ........... calibre n°3
from 86 to 110 g ......... calibre n°2
from 111 to 150 g ....... calibre n°1
to 150 g ................. calibre n°0

The price will of course depend on the origin and the caliber linked to the duration of the breeding. A rarer "flat" or "special" oyster like the Gillardeau oyster, which takes longer to raise, will be more expensive than a more ordinary oyster.

Similarly, the larger the oyster, the more time it has spent at sea and the more pronounced the flavor, so if you want someone to taste oysters for the first time, choose a size 3 or 4.
